Lemon-Garlic Shrimps With Squash Spaghetti

 

Lemon-Garlic Shrimps With Squash Spaghetti

Serves: 4

Ingredients

  • 1 small squash, around 400g
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 2 tablespoons olive oil

Shrimps

  • 250g shrimps, peeled and deveined
  • 1 tablespoon olive oil
  • 3 tablespoons butter
  • 1 tablespoon chopped parsley
  • 2 cloves garlic, minced
  • 1 ½ tablespoons lemon juice
  • Salt and pepper, to taste

 

Directions

  1. Heat oven to 200C.
  2. Cut the squash in half, by length. Remove seeds.
  3. Drizzle the squash with olive oil, and season with herbs, salt, and pepper.
  4. Roast the squash 45 minutes.
  5. In the meantime, make the shrimps; heat olive oil and butter into skillet.
  6. Add garlic and cook until fragrant.
  7. Toss in the shrimps and cook 5 minutes or until pink.
  8. Remove from heat and stir in lemon juice and parsley.
  9. Remove the squash from the oven. Using a fork, scrape the squash into “spaghetti”.
  10. Serve with shrimps.
