Avocado Eggs And Mushroom Bowl

Serves: 4

Ingredients

  • ½ California avocado, peeled, diced
  • 4 hardboiled eggs, peeled
  • 220g mushrooms, quartered
  • 2 cloves garlic, minced
  • 1 tablespoon coconut oil
  • 1 teaspoon sage
  • ¼ teaspoon salt
  • 1 pinch pepper

 

Directions

  1. Heat coconut oil in a skillet.
  2. Quarter the mushrooms.
  3. Add garlic and cook 30 seconds.
  4. Toss in the mushrooms, add sage and cook 7-8 minutes or until tender. Season with salt and pepper, to taste.
  5. In the meantime, gently mash half the avocado.
  6. Slice hardboiled eggs and place into a bowl. Add remaining avocado, and mushrooms.
  7. Top with mashed avocado and adjust seasoning.
  8. Toss to combine. Serve.
